We will also discuss a couple of magical Kefir recipes which you can easily make at home.
What is Kefir?
Kefir is a fermented milk drink from the northern Caucasus region of Eastern Russia. It consists of Kefir grains (which are bacteria and yeast) added to organic cow or goat’s milk. The mixture is placed in a warm place and left to ferment. The resulting product is yogurt like but has even more probiotic or beneficial bacteria that benefit our intestinal tract an overall health. These friendly bacteria (Bifidobacerium) improve the ‘housekeeping’ ability of the gut and strengthen our immune system against harmful pathogens.

How to make Kefir at home?
To make Kefir at home, will need to obtain a starter kit of kefir (readily available at a neighborhood health food store or online). A single sachet of the culture can be used for up to 6 batches of Kefir. At room temperature, add the sachet to a liter of organic cow milk. Leave it outside to ferment. You may now consume the curdled, yogurt like drink as is or use it in recipes given below. Store the leftover kefir in the refrigerator for up to 5 days. You can also use this to start a new batch of kefir by adding 100 ml to the milk and repeating the process above.
Easy Kefir recipe with milk
- 4 cups organic full fat milk (coconut, cow etc)
- 1 sachet of milk kefir grains
Method: In a large sterilized glass jar, add the kefir sachet. Pour the milk, stir and cover lightly with a lid. (Do not seal). Leave it to ferment in warm place away from sunlight. The milk will separate to form the Kefir liquid underneath. You can strain the mixture and store it in smaller bottles.
Easy Kefir recipe with water
- 1 sachet of kefir
- 1/3 rd cup castor sugar
- 3 cups water or coconut water(if using plain water, boil and cool it to room temperature)
- ½ lemon
- 1 inch piece of ginger grated
Method: Pour the warm water in a glass jar and add sugar to dissolve it. Add all remaining ingredients. Cover, but do not seal. Leave the mixture in a warm place and allow it to ferment for up to 3 days. Strain the mixture in smaller bottles and drink immediately or refrigerate for up to 5 days.
What is the difference between yogurt and Kefir?
Both yogurt and kefir are fermented probiotic foods. Yogurt has friendly transient bacteria that keeps the gut clean and also provides a source of food for the bacteria living in the gut. Kefir both bacteria and yeasts like Sacchromyces and Torula which not only clean the system up but also create colonies of friendly bacteria that strengthen the body’s defenses. It also contains a string of healthy bacteria like Lactobacillus Caucasus, Acetobacter and Streptococcus species.
How much Kefir to have daily for weight loss?
Kefir weight loss diet is very popular and based on testimonials, it seems that people have seen some great results with it. The key is to drink only kefir along with fruits and vegetables-in short to go on a Kefir fast. However, do talk to your dietitian whether the Kefir weight loss diet is good for you. That said; kefir is a healthy superfood and many Paleo diet followers (who do not consume dairy normally) eat Kefir as part of their healthy weight loss plan. Most of them replace cow milk with coconut milk when making Kefir.

- Blend the Kefir with fruits like bananas, strawberries, mangoes or peaches with some vanilla or cinnamon to make a delicious smoothie.
- Add some honey or agave nectar and drink as is.
- Mix it with veggies and spices to make a delicious snack.
Roasted banana Kefir recipe
- 2 ripe bananas
- Honey as per taste
- 2 cups plain homemade kefir
- Preheat oven to 400 F.
- Peel and slice the bananas lengthwise and drizzle honey on top. Place the bananas on an aluminum foil and bake for 10-12 minutes.
- Remove from oven and allow them to cool completely before blending with the kefir.
- Serve chilled.
